Apart from the classic dishes on the menu, guests may also choose the piece of beef they want, the breed of beef and also the age of the beef at the butcher’s stall in the middle of the restaurant. And because expertise and authenticity are not just features of gastronomic excellence, Colonel has also translated these fundamental values into the ambiance of the establishment. The floor in traditional Provençal red tiles, the wall a mosaic of bricks, the seating covered in leather are the produce of authentic artisan expertise for an urban and contemporary realization.
